Boozy Rice with Nuts and Berries

"I have made versions of this festive rice dish in many instances with rave comments from my visitors. It will vary nearly every aspect, the rice, citrus, dried fruits. It is healthful and you may serve all of it year long."

Ingredients :

  • 1 cup wild rice
  • three cups water
  • 1 cup brown rice
  • 2 cups water
  • 2 cups chopped pecans, toasted
  • 2 cups golden raisins
  • eight inexperienced onions, chopped
  • half cup chopped fresh mint leaves
  • 3 oranges, zested and juiced
  • half cup dry Marsala wine (non-compulsory)
  • half of cup olive oil
  • salt and freshly ground black pepper to taste

Instructions :

  • In one saucepan, combine the wild rice and three cups of water. Bring to a boil, cover and reduce warmness to low. Simmer for 40 to 50 minutes, or until rice is soft and water has been absorbed.
  • In a separate saucepan, integrate the brown rice and a couple of cups of water. Bring to a boil, cover and decrease warmth to low. Simmer for 45 minutes, or until rice is smooth and water has been absorbed.
  • After both kinds of rice have completed cooking, spread out on baking sheets to chill and dry for about half-hour.
  • In a massive bowl, integrate the wild rice, brown rice, pecans, raisins, green onions, mint, orange juice and zest. Stir in the wine and olive oil; season with salt and pepper. Cover and set apart for 2 hours to combo flavors. Serve at room temperature.
